During Sukkot, 30 young people gathered at Philadelphia’s Moishe House to celebrate Sustainability Shabbat, an annual event which showcases “the convergence between Judaism and sustainability,” according to Moishe House’s East Coast Regional Director, Rebecca Karp. The residents of Moishe House build a sukkah, cook the food – using exclusively ingredients produced within 200 miles of Philadelphia – and invite a speaker to facilitate discussion of “how to tread lightly in an urban environment,” through such measures as eating locally-raised food, composting and recycling.
